Enjoy delicious and easy steak and chicken fajitas made in your slowcooker! This recipe is perfect for a weeknight meal and can be customized with your favorite toppings.
Ingredients
Meat
1poundbeef flank steak
1poundchicken breasts (boneless and skinless)
Flavorings
1cupsalsa(I prefer mild but you can also use medium, plus extra for serving)
2tablespoonslime juice
2tablespoonsfresh cilantro(chopped)
2clovesgarlic(minced)
1tablespoonchili powder
1teaspooncumin
0.5teaspoonsalt
Vegetables & Toppings
8ouncesfrozen bell peppers and onions(one of the stores I shop at calls it “fajita mix”)
16flour tortillas(warmed)
1avocado(sliced, optional)
1cupshredded cheddar cheese(optional)
1cupsour cream(optional)
Instructions
Slice steak and chicken into strips. Place meat into slowcooker.
Add salsa, lime juice, cilantro, garlic, chili powder, cumin and salt.
Stir well to combine. Cover and cook on LOW 5-6 hours.
About ½ hour before serving, add frozen onion and bell pepper mixture until warmed through.
Serve meat and vegetable mixture in warmed flour tortillas. Top with optional avocado, cheese, sour cream and/or extra salsa, if desired.
Notes
For spicier fajitas, use medium or hot salsa and add a pinch of cayenne pepper.
