0.25cupnatural nut butter(almond, peanut, or cashew)
0.25cuphoney or pure maple syrup
1.5cupswhole wheat flour
0.5cupvanilla or unflavored protein powder(whey or plant-based)
1teaspoonbaking soda
1teaspoonbaking powder
1teaspoonground cinnamon
0.5teaspoonsalt
1teaspoonpure vanilla extract
0.5cupchopped walnuts or dark chocolate chips(Optional)
Instructions
Preheat oven to 350°F (175°C). Grease muffin tin or use liners.
Mash bananas in a large bowl until mostly smooth.
Whisk in eggs, yogurt, nut butter, honey (or maple syrup), and vanilla until creamy.
Combine flour, protein powder, baking soda, baking powder, cinnamon, and salt in a separate bowl.
Fold dry ingredients into wet ingredients until just combined.
Fold in nuts or chocolate chips, if using.
Divide batter evenly among 12 muffin cups, filling each ¾ full.
Bake for 18-22 minutes, until a toothpick comes out clean.
Cool in tin for 5 minutes, then transfer to a wire rack.
