A delightful appetizer featuring colorful vegetables rolled into flaky puff pastry spirals, perfect for impressing guests.

Ingredients

Vegetables

  • 1 medium zucchini (thinly sliced)
  • 1 medium yellow squash (thinly sliced)
  • 1 medium eggplant (thinly sliced)
  • 1 red bell pepper red bell pepper (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

  • 1 sheet puff pastry (thawed)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • for garnish fresh basil leaves (for garnish)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Combine vegetables with oil, thyme, oregano, salt, and pepper; toss to coat.
  • Cut puff pastry into rectangles, spread with ricotta, then arrange vegetables in a swirl pattern.
  • Sprinkle Parmesan, roll into spirals, place on baking sheet, and bake 25-30 minutes.
  • Garnish with basil leaves, serve warm.

Notes

Use a sharp knife to thinly slice vegetables for best presentation.
