Ingredients

Vegetables and Broth

  • 2 cups canned diced tomatoes
  • 1 cup vegetable broth
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • 1 cup pasta (any shape)
  • for garnish fresh basil leaves
  • optional grated parmesan cheese

Instructions 

  • Heat olive oil in a large pot, sauté onion and garlic until translucent.
  • Add tomatoes, broth, basil, oregano, salt, and pepper; simmer for 15-20 minutes.
  • Cook pasta separately until al dente, then drain.
  • Blend soup until smooth if desired, then serve topped with pasta and garnished with basil and cheese.

Notes

Feel free to add more herbs or cheese for extra flavor.
