A hearty and colorful baked pasta dish packed with fresh vegetables and melted cheese, perfect for a satisfying meal.

Ingredients

Pasta

  • 12 ounces whole wheat or regular penne pasta

Vegetables

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper chopped red bell pepper
  • 1 yellow bell pepper chopped yellow bell pepper
  • 1 zucchini sliced zucchini
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved

Sauces & Herbs

  • 1 cup marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper

Cheese

  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions 

  • Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  • Sauté onion and garlic in olive oil until soft, then add peppers, zucchini, and broccoli; cook until tender.
  • Stir in cherry tomatoes, marinara sauce, oregano, basil, salt, and pepper; simmer for 5 minutes.
  • Combine cooked pasta with sauce, transfer to baking dish, top with cheeses, and bake for 20-25 minutes.
  • Garnish with fresh basil before serving.

Notes

Feel free to add extra vegetables or switch up the cheese for variety.
