Ingredients

Pasta

  • 1 pound ziti pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper chopped
  • 1 zucchini chopped
  • 1 cup chopped broccoli florets
  • 1 28 ounce can crushed tomatoes
  • 1 15 ounce can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 1 large egg, beaten
  • 0.25 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions 

  • Preheat oven to 375°F (190°C). Cook pasta, then drain.
  • Sauté onion and garlic in olive oil until softened. Add vegetables and cook until tender.
  • Mix in crushed tomatoes, tomato sauce, herbs, salt, and pepper; simmer for 5 minutes.
  • Combine cooked pasta, vegetable sauce, and ricotta mixture. Layer in baking dish with cheese, then bake for 25-30 minutes.
  • Let stand 5-10 minutes before serving. Enjoy!

Notes

For extra flavor, sprinkle fresh basil on top before serving.
