Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or mexican blend)
  • 8 small flour tortillas small flour tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 cup sour cream (optional for serving)
  • chopped cilantro (optional for garnish) chopped cilantro

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix chicken, salsa, beans, corn, cumin, and chili powder.
  • Fill tortillas with 1/3 cup of mixture, add cheese, roll, and place seam-side down in a baking dish.
  • Pour remaining salsa over and sprinkle with cheese, then cover with foil and bake 20 minutes.
  • Remove foil, bake 10 more minutes until bubbly, then serve topped with sour cream and cilantro if desired.

Notes

For extra flavor, add a dash of hot sauce or serve with lime wedges.
