Equipment

  • mixing bowl
  • grill or grill pan

Instructions

  • In a large mixing bowl, combine the ground beef or lamb with the grated onion, parsley, mint, garlic, cumin, allspice, cinnamon, salt, and black pepper.
  • Mix the ingredients thoroughly with your hands until well combined.
  • Cover the mixture and let it rest in the refrigerator for at least 30 minutes to enhance the flavors.
  • Preheat your grill or grill pan over medium-high heat.
  • While the grill is heating, shape the meat mixture into elongated patties around the skewers, pressing firmly to ensure they hold their shape.
  • Brush the skewers lightly with olive oil to prevent sticking.
  • Once the grill is ready, place the skewers on it and cook for about 10-12 minutes, turning them occasionally, until the kafta is browned and cooked through.
  • Remove from the grill and let them rest for a few minutes before serving.
  • Serve the kafta hot with pita bread, tahini sauce, and a fresh salad.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the meat mixture.
