A delicious and comforting peach cobbler with a flaky crust and sweet, spiced peaches. Perfect for a cozy dessert or family gathering.

Ingredients

Peaches

  • 40 ounces Frozen peaches
  • 1 cup Granulated sugar ((white sugar))
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract ((optional but recommended))
  • 1/2 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • 1/2 stick Butter (unsalted, room temperature)
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice
  • 2 cups All purpose Flour
  • 1/2 cup Granulated sugar ((white sugar))
  • 1/2 cup Brown sugar
  • 2 teaspoons Baking powder
  • 1 tablespoon Cinnamon (reserve 1/2 for garnishment)
  • 1 stick Unsalted cold butter
  • 1/4 cup Boiling hot water ((see notes))
  • 1/2 teaspoon Salt
  • 3 tablespoons Granulated sugar (to dust top of cobbler)

Instructions 

  • Preheat oven to 375°F (190°C). Spray a 9x13 inch dish and add peaches with sugars, vanilla, almond, spices, starch, tartar, butter, water, and lemon juice. Mix until combined.
  • Cover with foil and bake for 20 minutes. Meanwhile, prepare the biscuit topping by combining flour, sugars, baking powder, salt, and cinnamon.
  • Work cold butter into the flour mixture until crumbly. Add hot water and stir until just combined, forming a drop biscuit dough.
  • Remove peaches from oven, spoon dough over peaches in small droplets, and sprinkle with cinnamon sugar mixture. Bake uncovered for 30-45 minutes until golden brown.

Notes

Ensure dough droplets are spaced to cook through evenly.
