1teaspoonCream of tartar
1/2stickButter (unsalted, room temperature)
2tablespoonsWater
1teaspoonFresh lemon juice
2cupsAll purpose Flour
1/2cupGranulated sugar((white sugar))
1/2cupBrown sugar
2teaspoonsBaking powder
1tablespoonCinnamon (reserve 1/2 for garnishment)
1stickUnsalted cold butter
1/4cupBoiling hot water((see notes))
1/2teaspoonSalt
3tablespoonsGranulated sugar (to dust top of cobbler)
Instructions
Preheat oven to 375°F (190°C). Spray a 9x13 inch dish and add peaches with sugars, vanilla, almond, spices, starch, tartar, butter, water, and lemon juice. Mix until combined.
Cover with foil and bake for 20 minutes. Meanwhile, prepare the biscuit topping by combining flour, sugars, baking powder, salt, and cinnamon.
Work cold butter into the flour mixture until crumbly. Add hot water and stir until just combined, forming a drop biscuit dough.
Remove peaches from oven, spoon dough over peaches in small droplets, and sprinkle with cinnamon sugar mixture. Bake uncovered for 30-45 minutes until golden brown.

Ensure dough droplets are spaced to cook through evenly.
