Ingredients

Pasta

  • 12 pieces jumbo pasta shells (cooked al dente)

Cheese

  • 15 oz ricotta cheese (or cottage cheese for lighter option)
  • 8 oz mozzarella cheese (substitute with fontina or provolone)
  • 1/2 cup parmesan cheese (or vegetarian parmesan)

Vegetables

  • 5 oz fresh spinach (or ½ cup well-drained thawed frozen spinach)
  • 2 cloves garlic (minced)
  • 1 large egg (omit for vegan versions or replace with flax egg)
  • 1/4 tsp nutmeg (optional)

Sauce

  • 2 cups marinara sauce (your favorite brand or homemade)
  • 1/4 cup fresh basil or parsley (for garnish)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix ricotta, half of the mozzarella, parmesan, spinach, garlic, egg, and nutmeg in a bowl.
  • Stuff cooked shells with the cheese mixture and place in a baking dish with marinara sauce.
  • Top with remaining mozzarella and bake for 25-30 minutes until bubbly and golden.
  • Garnish with fresh basil or parsley before serving.

Notes

For a vegan version, omit the egg and use plant-based cheese.
