Instructions
Preheat oven to 375°F (190°C).
Mix ricotta, half of the mozzarella, parmesan, spinach, garlic, egg, and nutmeg in a bowl.
Stuff cooked shells with the cheese mixture and place in a baking dish with marinara sauce.
Top with remaining mozzarella and bake for 25-30 minutes until bubbly and golden.

Notes
For a vegan version, omit the egg and use plant-based cheese.
