This vibrant Thai Mango Salad combines sweet, spicy, and tangy flavors, perfect for a refreshing spring meal.

Ingredients

Fruits and Vegetables

  • 2 pieces ripe mangoes, peeled and julienned
  • 1 cup shredded carrots
  • 1 piece red bell pepper, thinly sliced
  • 1 piece cucumber, julienned
  • 0.25 cup fresh cilantro, chopped
  • 2 green onions sliced
  • 0.25 cup roasted peanuts, crushed
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 teaspoon red chili flakes
  • to taste salt

Instructions 

  • Combine mangoes, carrots, bell pepper, and cucumber in a large bowl.
  • Add cilantro and green onions to the bowl.
  • Whisk lime juice, fish sauce, honey, chili flakes, and salt to make the dressing.
  • Pour dressing over the salad and toss gently.
  • Top with crushed peanuts and serve immediately.

Notes

For extra flavor, let the salad sit for 10 minutes before serving.
