A flavorful and cheesy taco pasta dish that combines seasoned beef, pasta, and melty cheeses for a satisfying meal.

Ingredients

Meat and Dairy

  • 1 lb ground beef
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 oz taco seasoning (1 packet or 2 tbsp homemade)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1/2 cup chicken broth
  • 3/4 cup whole milk (room temperature)
  • 10 oz can Rotel tomatoes with green chilies (undrained)
  • 8 oz medium pasta shells
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded Monterey Jack cheese
  • 3 oz Velveeta cheese, cubed (or 1/2 cup extra shredded cheese)

Seasoning and Garnish

  • to taste Salt and pepper
  • for garnish Fresh cilantro, green onions, or crushed tortilla chips

Instructions 

  • Cook pasta in salted boiling water until just al dente, drain and set aside.
  • Brown ground beef in a skillet with butter, add garlic, and cook until fragrant.
  • Stir in taco seasoning, Worcestershire, and tomato paste to season the beef.
  • Add broth, milk, and Rotel; simmer for 4-5 minutes.
  • Combine cooked pasta with sauce, then stir in cheeses until melted and creamy.
  • Adjust seasoning, serve garnished with cilantro or toppings.

Notes

For extra flavor, top with crushed tortilla chips or fresh herbs.
