Ingredients

Protein

  • 2 fillets salmon fillets

Grains

  • 1 cup couscous

Broth

  • 1 1/4 cups vegetable broth

Vegetables & Herbs

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Oils & Liquids

  • 2 tablespoons olive oil
  • 1 lemon lemon, juiced

Seasonings

  • to taste salt and pepper

Instructions 

  • Bring vegetable broth to a boil, then add couscous, cover, and let sit for 5 minutes.
  • Heat olive oil in a skillet and cook seasoned salmon for 4-5 minutes per side until cooked through.
  • Fluff couscous, then stir in cherry tomatoes, cucumber, red onion, parsley, and lemon juice.
  • Divide the couscous mixture into bowls, top with salmon, and serve immediately.

Notes

For extra flavor, add a drizzle of lemon or a sprinkle of herbs before serving.
