A delicious and healthy vegetarian dish featuring baked sweet potatoes filled with a flavorful black bean and corn mixture, topped with fresh avocado and cilantro.
Ingredients
Sweet Potatoes
4mediumsweet potatoes
1cupblack beans, rinsed and drained
1cupcorn, frozen or canned
1cupdiced tomatoes
1teaspooncumin
1teaspoonchili powder
to tastesalt and pepper
1avocadodiced avocado
for garnishfresh cilantro
for servinglime wedges
Instructions
Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45-60 minutes until tender.
Mix black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
Cool sweet potatoes, then slice in half and scoop out some flesh to create space.
Fill each half with the bean mixture, top with diced avocado, and garnish with cilantro.
Serve with lime wedges on the side.
Notes
For extra flavor, add a squeeze of lime or hot sauce.
