A delicious and healthy vegetarian dish featuring baked sweet potatoes filled with a flavorful black bean and corn mixture, topped with fresh avocado and cilantro.

Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 avocado diced avocado
  • for garnish fresh cilantro
  • for serving lime wedges

Instructions 

  • Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45-60 minutes until tender.
  • Mix black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
  • Cool sweet potatoes, then slice in half and scoop out some flesh to create space.
  • Fill each half with the bean mixture, top with diced avocado, and garnish with cilantro.
  • Serve with lime wedges on the side.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
