1cupalmond flour
1/2cupprotein powder(whey or plant-based)
1/4cuperythritol(or sweetener of choice)
1teaspoonbaking powder
1/4teaspoonsalt
2largeeggs
1/4cupunsweetened almond milk
1/4cupmelted coconut oil or butter
1teaspoonvanilla extract
1/2cupchopped fresh strawberries
Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
Whisk together almond flour, protein powder, erythritol, baking powder, and salt in a large bowl.
In a separate bowl, whisk together eggs, almond milk, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the chopped strawberries.
Divide the batter evenly among the prepared muffin liners.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
