  • 1 cup almond flour
  • 1/2 cup protein powder (whey or plant-based)
  • 1/4 cup erythritol (or sweetener of choice)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped fresh strawberries

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Whisk together almond flour, protein powder, erythritol, baking powder, and salt in a large bowl.
  • In a separate bowl, whisk together eggs, almond milk, melted coconut oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Gently fold in the chopped strawberries.
  • Divide the batter evenly among the prepared muffin liners.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, use melted butter instead of coconut oil.
