Ingredients

Protein

  • 2 pieces salmon fillets

Grains

  • 1 cup couscous

Broth & Sauces

  • 1 1/4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Vegetables

  • 1 cup mixed vegetables (e.g., bell peppers, broccoli, carrots)

Garnishes

Instructions 

  • Whisk soy sauce, honey, olive oil, garlic powder, salt, and pepper in a bowl.
  • Cook salmon in a skillet over medium heat for 3-4 minutes per side until sticky and cooked through.
  • Bring vegetable broth to a boil, add couscous, cover, and let sit for 5 minutes. Fluff with a fork.
  • Sauté mixed vegetables in the same skillet for 3-5 minutes until tender.
  • Divide couscous into bowls, top with salmon, vegetables, and garnish with green onions and sesame seeds.

Notes

For extra flavor, drizzle with additional soy sauce or sesame oil before serving.
