Enjoy a quick and delicious one-pot steak fajita meal. This recipe is easy to make and perfect for a weeknight dinner.

  • 1 lb skirt steak (thinly sliced)
  • 1 large onion (sliced)
  • 2 bell peppers (various colors, sliced)
  • 1 packet fajita seasoning
  • 2 tablespoons olive oil
  • 0.5 cup beef broth (or water)
  • Flour tortillas (warmed)
  • Optional toppings (sour cream, guacamole, salsa, shredded cheese)

Instructions 

  • Heat olive oil in a large skillet or pot over medium-high heat.
  • Add sliced steak and cook until browned, about 3-5 minutes.
  • Add sliced onions and bell peppers to the pot.
  • Sprinkle fajita seasoning over the steak and vegetables. Stir well to combine.
  • Pour in beef broth (or water) and bring to a simmer. Cook until vegetables are tender and the sauce has slightly thickened, about 5-7 minutes.
  • Serve immediately in warmed flour tortillas with your favorite toppings.

Notes

For extra flavor, marinate the steak for at least 30 minutes before cooking.
