  • 1.5 lbs flank steak
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 limes (Juice of)
  • 2 tsp cumin
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • to taste Salt & pepper
  • 1 tbsp olive oil
  • 0.5 cup beef broth or water

Instructions 

  • Combine lime juice, garlic, cumin, chili powder, salt, and pepper for the marinade.
  • Marinate steak for at least 30 minutes.
  • Sauté onions and bell peppers in olive oil until softened.
  • Remove veggies, sear steak on each side for 3 minutes.
  • Return veggies, add broth, and cook on high pressure for 10 minutes.
  • Quick release steam and serve with tortillas and toppings.

Notes

For extra flavor, add a splash of Worcestershire sauce to the marinade.
