These delicious pumpkin muffins are a perfect fall treat, inspired by the popular Starbucks version.

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
  • In a large mixing bowl, combine the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Do not overmix.
  • If desired, fold in the chopped walnuts or pecans and chocolate chips.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

You can substitute the nuts and chocolate chips based on your preference.
