A delicious and comforting casserole combining summer squash, stuffing, and cheese for a hearty dish.

Ingredients

Water and Salt

  • 3/4 cup water
  • 1/4 teaspoon salt

Main Ingredients

  • 6 cups sliced yellow summer squash ((1/4 inch thick))
  • 1 small onion (halved and sliced)
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup (undiluted)
  • 1 cup sour cream
  • 1 package (6 ounces) cornbread stuffing mix
  • 1 can (4 ounces) chopped green chiles
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 350°F (175°C). Boil water with salt, add squash and onion, cook 6 minutes. Drain and set aside.
  • Mix soup, sour cream, stuffing, chiles, salt, and pepper in a bowl. Fold in squash mixture.
  • Pour into a greased 2-quart dish, sprinkle with cheese.
  • Bake uncovered for 25-30 minutes until heated through and top is golden.

Notes

Using a shallow dish helps the casserole brown on top without becoming mushy underneath.
