A delicious and comforting casserole combining summer squash, stuffing, and cheese for a hearty dish.
Ingredients

sliced yellow summer squash
((1/4 inch thick))

condensed cream of mushroom soup
(undiluted)

sour cream

cornbread stuffing mix

chopped green chiles
to taste
Salt and pepper

shredded cheddar cheese
Instructions
Preheat oven to 350°F (175°C). Boil water with salt, add squash and onion, cook 6 minutes. Drain and set aside.
Mix soup, sour cream, stuffing, chiles, salt, and pepper in a bowl. Fold in squash mixture.
Pour into a greased 2-quart dish, sprinkle with cheese.
Bake uncovered for 25-30 minutes until heated through and top is golden.
Notes
Using a shallow dish helps the casserole brown on top without becoming mushy underneath.
