A flavorful and spicy Nigerian chicken stew packed with bold spices and fresh vegetables, perfect for a hearty meal.

Ingredients

Meat

  • 1.5 lbs chicken, cut into pieces

Oil

  • 2 tablespoons vegetable oil

Vegetables

  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper chopped bell pepper
  • 2 carrots sliced carrots

Canned Goods

  • 14 oz diced tomatoes
  • 2 tablespoons tomato paste

Spices & Broth

  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • to taste salt
  • 2 cups chicken broth

Additional Vegetables

  • 1 piece chopped additional bell pepper
  • 2 carrots sliced carrots

Garnish

  • fresh cilantro or parsley (for garnish)

Instructions 

  • Heat oil in a large pot over medium heat.
  • Sauté onions until translucent, then add garlic and ginger; cook for 1 minute.
  • Add blended peppers, diced tomatoes, and tomato paste; cook until sauce thickens (10-15 min).
  • Season with thyme, curry powder, paprika, and salt. Add chicken and coat with sauce.
  • Pour in chicken broth, add vegetables, cover, and simmer for 25-30 minutes until cooked.

Notes

Adjust seasoning as needed and serve hot, garnished with fresh herbs.
