Instructions
Heat oil in a large pot over medium heat.
Sauté onions until translucent, then add garlic and ginger; cook for 1 minute.
Add blended peppers, diced tomatoes, and tomato paste; cook until sauce thickens (10-15 min).
Season with thyme, curry powder, paprika, and salt. Add chicken and coat with sauce.
Pour in chicken broth, add vegetables, cover, and simmer for 25-30 minutes until cooked.
Notes
Adjust seasoning as needed and serve hot, garnished with fresh herbs.
