Ingredients

Filling

  • 400 g canned chickpeas (drained and rinsed)
  • 2 medium ripe avocados
  • ½ medium red onion (diced)
  • 1 medium bell pepper (diced)
  • 1 small jalapeño (minced (optional))
  • 2 tbsp lime juice (freshly squeezed)

Wraps

  • 4 large tortillas

Instructions 

  • Mash avocados, stir in chickpeas, onion, bell pepper, jalapeño, lime juice, and spices.
  • Warm tortillas for easier handling.
  • Divide filling among tortillas, add optional toppings.
  • Fold sides and roll tightly.
  • Cut in half and serve immediately.

Notes

Adjust the amount of jalapeño to your spice preference. For a smoother filling, blend the chickpeas and avocado together.
