Ingredients

Pasta

  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 3 cups whole milk
  • 1 cup evaporated milk
  • 2 large eggs, beaten
  • 2 tablespoons sour cream (optional for creaminess)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded (divided)
  • 1 cup Colby Jack cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 1/4 cup Parmesan cheese, grated (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Cook macaroni until al dente, drain, and return to pot. Stir in butter until melted.
  • Whisk together milk, eggs, spices, and sour cream. Mix into macaroni, then add cheeses and combine.
  • Pour mixture into baking dish, top with remaining cheddar cheese, and bake for 35-40 minutes until golden and bubbly.
  • Let rest for 10 minutes before serving to set.

Notes

For extra creaminess, add more sour cream or cheese as desired.
