Dry ingredients
1cupold-fashioned oats
1/3cupoat flour (finely ground oats)
1/2teaspoonground cinnamon
1/2teaspoonsalt
Wet ingredients
1/3cupcreamy peanut butter
1/4cupmelted coconut oil
1/4cuphoney
1/3cuplight brown sugar (lightly packed)
1teaspoonvanilla extract
1largeegg
1largeegg yolk(save whites for another recipe or discard)
1/2cupdark chocolate chips (coarsely chopped)
Instructions
Preheat oven to 325°F (160°C). Line an 8x8-inch pan with parchment paper.
Pulse oats in a blender until they resemble flour; measure after blending.
Mix all wet and dry ingredients except chocolate chips until smooth. Coarsely chop chocolate chips and fold into batter. Transfer to pan.
Bake for 23–26 minutes until set at edges. Cool before slicing.
