Delicious mini quesadillas filled with smashed burger patties, cheese, and fresh toppings, perfect for a quick and satisfying meal.

Ingredients

Meat

  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Tortillas & Cheese

  • 4 pieces flour tortillas
  • 1 cup shredded cheddar cheese

Vegetables & Pickles

  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup pickles (optional)

Other

  • as needed for frying cooking oil (for frying)
  • optional optional toppings: sour cream, salsa, or guacamole

Instructions 

  • Heat a skillet with a little cooking oil over medium-high heat.
  • Divide beef into four portions, season with salt and pepper, then smash and cook each for 2-3 minutes per side.
  • Place a tortilla in the skillet, sprinkle cheese, add a burger patty, vegetables, then top with more cheese and fold.
  • Cook each quesadilla 2-3 minutes per side until golden and cheese melts. Slice and serve with toppings.

Notes

Ensure to smash the beef patties thin for quick cooking and crispy edges.
