A flavorful and easy-to-make slow cooker dish combining tender chicken, fragrant herbs, and rice, perfect for a comforting meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Grains

  • 1 cup long-grain white rice

Broth & Liquids

  • 2 cups chicken broth
  • 1 piece lemon (zested and juiced)

Aromatics & Herbs

  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Vegetables

  • 1 cup frozen peas

Fats & Oils

  • 2 tablespoons olive oil

Garnish

  • to taste fresh parsley (for garnish)

Instructions 

  • Add olive oil to slow cooker, then place chicken on top.
  • Mix lemon juice, zest, garlic, thyme, rosemary, salt, and pepper; pour over chicken.
  • Add rice and chicken broth; stir gently.
  • Cook on low 6-7 hours or high 3-4 hours.
  • 30 minutes before serving, add peas; shred chicken and mix.
  • Serve hot, garnished with parsley.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
