Instructions
Add olive oil to slow cooker, then place chicken on top.
Mix lemon juice, zest, garlic, thyme, rosemary, salt, and pepper; pour over chicken.
Add rice and chicken broth; stir gently.
Cook on low 6-7 hours or high 3-4 hours.
30 minutes before serving, add peas; shred chicken and mix.
Serve hot, garnished with parsley.
Notes
For extra flavor, add a squeeze of fresh lemon before serving.
