A flavorful and easy slow cooker dish combining tender chicken, fragrant herbs, and rice, perfect for a comforting meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Grains

  • 1 cup long-grain white rice

Broth & Liquids

  • 2 cups chicken broth
  • 1 piece lemon (juiced and zested)

Herbs & Spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Garlic & Onion

  • 4 cloves garlic (minced)
  • 1 piece onion (chopped)

Seasonings

  • to taste salt and pepper

Vegetables (optional)

  • 1 cup frozen peas (add in last 30 minutes)

Garnish (optional)

  • as needed fresh parsley (for garnish)

Instructions 

  • Place chopped onion and minced garlic in slow cooker, add chicken on top.
  • Mix broth, lemon juice, zest, thyme, rosemary, salt, and pepper; pour over chicken.
  • Add rice around chicken, cover, and cook on low 6-7 hours or high 3-4 hours.
  • If using, add peas in last 30 minutes, then fluff rice and garnish with parsley before serving.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
