  • 2 lbs beef stew meat (cut into bite-sized cubes)
  • 1 lb baby potatoes (halved or quartered if large)
  • 4 tbsp unsalted butter
  • 6 cloves garlic (minced)
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper (to taste)
  • 2 tbsp olive oil
  • Fresh parsley (chopped (for garnish))

Instructions 

  • Sear beef in olive oil until browned, then transfer to slow cooker.
  • Sauté minced garlic in butter until fragrant.
  • Pour beef broth, Worcestershire sauce, thyme, and rosemary over beef.
  • Add potatoes to the slow cooker.
  • Place remaining butter on top.
  • Cook on low for 6-7 hours or high for 3-4 hours.
  • Taste and adjust seasoning.
  • Garnish with parsley and serve.

Notes

For extra flavor, consider adding a bay leaf during cooking and removing it before serving.
