Ingredients

Meat

  • 1.5 pounds beef chuck roast, cut into bite-sized pieces
  • 4 cups baby potatoes, halved
  • 0.5 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • fresh parsley, chopped (for garnish)

Instructions 

  • Combine beef, salt, pepper, thyme, and red pepper flakes in a bowl.
  • Place halved potatoes in the slow cooker, then add seasoned beef on top.
  • Melt butter in a saucepan, add garlic, cook 1-2 minutes, then stir in Worcestershire sauce.
  • Pour garlic butter over beef and potatoes, cover, and cook on low 6-8 hours or high 3-4 hours.
  • Gently stir to combine, garnish with parsley before serving.

Notes

For extra flavor, add a splash of fresh herbs before serving.
