This hearty Slow Cooker Cowboy Casserole combines ground meat, beans, and vegetables topped with cheese and tater tots for a comforting meal.

  • In a skillet over medium heat, brown the ground beef or turkey with diced onion and minced garlic until fully cooked. Drain any excess fat.
  • Transfer the cooked meat mixture to the slow cooker.
  • Add the black beans, corn, diced tomatoes, frozen mixed vegetables, chili powder, cumin, smoked paprika, salt, and pepper to the slow cooker. Stir well to combine.
  • Cover and cook on low for 4 to 6 hours, or until heated through and flavors have melded.
  • About 30 minutes before serving, sprinkle the shredded cheddar cheese on top and layer the tater tots over the cheese.
  • Cover and cook for an additional 30 minutes, until the tater tots are crispy and the cheese is melted.
  • Serve hot and enjoy your hearty cowboy casserole!
