  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  • Transfer the sautéed onion and garlic to the slow cooker.
  • Add the chicken thighs, carrots, potatoes, thyme, rosemary, paprika, salt, and pepper to the slow cooker.
  • Stir in the chicken broth and tomato paste, ensuring everything is well combined.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
  • About 30 minutes before serving, stir in the frozen peas.
  • Once done, taste and adjust seasonings if necessary. Serve hot, garnished with fresh parsley.

Notes

You can substitute chicken thighs with chicken breasts if preferred. Adjust the seasoning according to your taste.
