A comforting and easy-to-make meal combining flavorful tomato soup with crispy grilled cheese sandwiches.

For the Sandwiches

Instructions
Heat olive oil in a pot, sauté onion and garlic until soft.
Add crushed tomatoes, vegetable broth, basil, salt, and pepper; simmer for 15 minutes.
While the soup simmers, butter bread slices, assemble sandwiches with cheese, and grill until golden, about 3-4 minutes per side.
Puree the soup with an immersion blender for a smooth texture (optional).
Serve hot with grilled cheese cut in halves.
