A comforting and easy-to-make meal combining flavorful tomato soup with crispy grilled cheese sandwiches.

Ingredients

Soup Ingredients

  • 2 cups canned crushed tomatoes
  • 1 cup vegetable broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • to taste salt and pepper

For the Sandwiches

  • 4 slices bread
  • 4 slices cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • butter for grilling

Instructions 

  • Heat olive oil in a pot, sauté onion and garlic until soft.
  • Add crushed tomatoes, vegetable broth, basil, salt, and pepper; simmer for 15 minutes.
  • While the soup simmers, butter bread slices, assemble sandwiches with cheese, and grill until golden, about 3-4 minutes per side.
  • Puree the soup with an immersion blender for a smooth texture (optional).
  • Serve hot with grilled cheese cut in halves.

Notes

Use fresh basil for best flavor and adjust salt and pepper to taste.
