A quick and hearty baked chicken dish with rice and vegetables, perfect for a wholesome meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 cups mixed vegetables (carrots, broccoli, bell peppers)

Grains

  • 1 cup uncooked rice

Broth

  • 2 cups chicken broth

Spices and Oils

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper salt and pepper

Oils

  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Combine rice and vegetables in a baking dish, place chicken on top.
  • Drizzle with olive oil, season with spices, pour broth over.
  • Cover with foil and bake for 40-45 minutes, then uncover and bake 10-15 minutes.
  • Let rest briefly before serving.
