Ingredients

Meat

  • 1 lb lean ground turkey
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium zucchini, sliced thinly
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp extra virgin olive oil

Instructions 

  • Chop vegetables and mince garlic.
  • Heat olive oil and sauté onion until translucent.
  • Add ground turkey; cook until browned.
  • Stir in bell peppers, zucchini, and garlic; cook until tender.
  • Pour in broth and soy sauce, add cumin and paprika; simmer 5 minutes.
