A quick and flavorful meal featuring tender flank steak roasted with colorful vegetables on a single sheet pan.

Ingredients

Meat

  • 1 lb flank steak

Vegetables

  • 2 cups broccoli florets
  • 1 piece bell pepper, sliced
  • 1 cup cherry tomatoes

Seasonings & Oils

  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper

Garnish

  • optional fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Combine vegetables with 1 tablespoon olive oil, salt, pepper, and half of the seasonings. Toss and spread on one side of a sheet pan.
  • Rub steak with remaining olive oil and seasonings. Place on the other side of the sheet pan.
  • Bake for 15-20 minutes until steak reaches desired doneness and veggies are tender.
  • Rest steak for 5 minutes, then slice and serve with roasted vegetables. Garnish with parsley if desired.

Notes

Adjust seasoning and cooking time to your preference.
