Ingredients

Chicken and Potatoes

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes (halved)

Marinade

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Garnish

  • Fresh parsley (for garnish)

Instructions 

  • Preheat the oven to 400°F (200°C).
  • Whisk together balsamic vinegar, olive oil, honey, garlic, oregano, salt, and pepper.
  • Marinate chicken and potatoes for at least 30 minutes.
  • Spread chicken and potatoes on a sheet pan.
  • Bake for 25-30 minutes or until chicken is cooked through.
  • Garnish with fresh parsley before serving.

Notes
