A flavorful and easy sheet pan dinner featuring tender chicken thighs, roasted potatoes, and a zesty lemon balsamic glaze.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken thighs

Vegetables

  • 1 lb baby potatoes, halved

Sauces & Condiments

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 lemons lemons, juiced and zested
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Garnish

  • fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Whisk together balsamic, olive oil, lemon juice, zest, garlic, oregano, salt, and pepper.
  • Toss chicken and potatoes in marinade, then spread on a sheet pan.
  • Bake for 25-30 minutes until cooked and tender.
  • Garnish with parsley before serving.

Notes

For extra flavor, marinate the chicken for 30 minutes before baking.
