A quick and flavorful sheet pan meal combining tender gnocchi, savory sausage, and colorful vegetables for an easy dinner.

Ingredients

  • 1 pound gnocchi
  • 1 pound italian sausage, sliced
  • 1 red bell pepper, sliced red bell pepper
  • 1 yellow bell pepper, sliced yellow bell pepper
  • 1 red onion, sliced red onion
  • 2 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • to taste salt and pepper salt and pepper
  • for garnish optional fresh basil (for garnish)

Instructions 

  • Preheat oven to 425°F (220°C).
  • Combine gnocchi, sausage, peppers, onion, and tomatoes on a sheet pan. Drizzle with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
  • Toss to coat and spread evenly. Bake for 20-25 minutes, stirring halfway.
  • Remove from oven, garnish with basil if desired, and serve warm.

Notes

Use fresh basil for best flavor and adjust seasoning to taste.
