Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 1 pound baby potatoes (halved)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes (halved)

Dairy & Fats

  • 1/2 cup unsalted butter (melted)
  • 4 cloves garlic (minced)

Spices & Herbs

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Other

  • to taste salt and pepper
  • 1 whole lemon (sliced)

Instructions 

  • Preheat oven to 400°F (200°C). Mix melted butter, garlic, thyme, rosemary, salt, and pepper.
  • Arrange chicken, potatoes, and broccoli on a sheet pan. Drizzle with half of the garlic butter, tossing to coat.
  • Place lemon slices on chicken and around vegetables. Roast for 25-30 minutes.
  • Remove from oven, drizzle remaining garlic butter, and serve hot.

Notes

For extra flavor, add fresh herbs before serving.
