A delicious and easy one-pan meal featuring tender chicken breasts roasted with garlic butter and colorful vegetables.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 cups broccoli florets
  • 2 cups baby carrots
  • 1 cup cherry tomatoes

Dairy & Oils

  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced

Spices & Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Additional

  • 1 tablespoon olive oil
  • fresh parsley, chopped for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix melted butter, garlic, paprika, thyme, salt, and pepper.
  • Place chicken on one side of a sheet pan and drizzle with half of the garlic butter.
  • Toss vegetables with olive oil and remaining garlic butter, then spread on the other side of the pan.
  • Bake for 25-30 minutes, then rest and garnish with parsley.

Notes

Ensure chicken is cooked through before serving.
