  • 3 large eggs
  • 1 cup shredded cheddar or mozzarella cheese
  • 0.5 cup oat flour or all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp garlic powder
  • 0.5 tsp black pepper

  • 0.5 cup diced bell peppers
  • 0.5 cup chopped spinach or zucchini
  • Olive oil spray or muffin liners

Instructions 

  • Preheat oven to 375°F (190°C) and grease or line a muffin tin.
  • In a bowl, whisk eggs until smooth.
  • Stir in cottage cheese and shredded cheese until combined.
  • Add flour, baking powder, garlic powder, salt, and pepper. Mix gently.
  • Fold in vegetables until evenly distributed.
