6cupschopped romaine lettuce
1cupcooked black beans, rinsed and drained
1cupcorn kernels (fresh, frozen, or canned)
1red bell pepper, chopped
1/2cupchopped red onion
1/2cupchopped cilantro
1avocado, diced
1/4cupcrumbled cotija cheese (optional)
Santa Fe Salad Dressing (see recipe below)
Instructions
Combine lettuce, beans, corn, pepper, onion, and cilantro in a bowl.
Toss the salad gently to combine.
Add avocado and cotija cheese (if using).
Drizzle with dressing to taste and toss gently.
Serve immediately.
Notes
For a spicier kick, add a pinch of cayenne pepper to the dressing.
