A vibrant and flavorful Santa Fe Salad packed with fresh vegetables and a zesty dressing. Perfect as a light lunch or a side dish for your next gathering.

Ingredients

Salad Ingredients

  • 6 cups chopped romaine lettuce
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, chopped
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cilantro
  • 1 avocado, diced
  • 1/4 cup crumbled cotija cheese (optional)
  • Santa Fe Salad Dressing (see recipe below)

Instructions 

  • Combine lettuce, beans, corn, pepper, onion, and cilantro in a bowl.
  • Toss the salad gently to combine.
  • Add avocado and cotija cheese (if using).
  • Drizzle with dressing to taste and toss gently.
  • Serve immediately.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
