A flavorful and easy pasta dish featuring roasted cherry tomatoes, garlic, and creamy ricotta cheese, perfect for a quick weeknight dinner.

Ingredients

Vegetables and Aromatics

  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

Pasta and Dairy

  • 8 ounces pasta (spaghetti or your choice)
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese

Garnish

Instructions 

  • Preheat oven to 400°F (200°C). Toss cherry tomatoes, minced garlic, olive oil, salt, and pepper; roast for 20-25 minutes.
  • Cook pasta until al dente; drain and set aside.
  • Mix roasted tomatoes and garlic with ricotta cheese; combine with cooked pasta.
  • Sprinkle with grated Parmesan and garnish with basil before serving.

Notes

For extra flavor, add a drizzle of balsamic vinegar or red pepper flakes.
