A flavorful and easy-to-make roasted chicken dish with vegetables and aromatic garlic, perfect for a wholesome meal.

Ingredients

Protein

  • 4 pieces chicken thighs (bone-in, skin-on)

Vegetables

  • 1 head garlic (Head of garlic)
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)

Oils & Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Garnish

  • optional fresh parsley for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Slice the top off the garlic head. Mix chicken with oil, salt, pepper, thyme, and paprika. Toss vegetables with seasoning.
  • Arrange chicken, vegetables, and garlic in a roasting pan. Roast for 35-45 minutes until cooked and tender.
  • Let rest briefly. Squeeze roasted garlic over the dish. Garnish with parsley if desired and serve warm.
