1cupspinach(roughly chopped)
1cupcauliflower florets
1bell pepper(diced)
2tablespoonsolive oil
1teaspoongarlic powder
1teaspoonsmoked paprika
1teaspoondried oregano
1/2cupshredded mozzarella cheese(optional)
2tablespoonslow carb soy sauce or coconut aminos
Instructions
Press tofu for 10 minutes.
Preheat oven to 375°F (190°C).
Cube tofu and season with oil, garlic powder, paprika, oregano, and soy sauce.
Chop vegetables and combine with tofu.
Add cheese and herbs, mixing gently.
Transfer mixture to a baking dish and spread evenly.
Bake for 25-30 minutes until golden.
