A delicious and quick baked manicotti recipe packed with spinach and cheese, perfect for busy weeknights.

Ingredients

  • 1 pint ricotta cheese
  • 2 large eggs
  • 1 10 ounce frozen chopped spinach (thawed and drained)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (divided)
  • 1.5 tablespoons white sugar
  • teaspoon salt
  • ¼ teaspoon ground black pepper
  • 12 pieces manicotti shells
  • 1 32 ounce jar spaghetti sauce

Instructions 

  • Mix ricotta and eggs until blended, then stir in spinach, cheeses, sugar, salt, and pepper.
  • Stuff mixture into uncooked shells and arrange in a baking dish with sauce.
  • Pour remaining sauce over shells, cover, and refrigerate for 8 hours or overnight.
  • Preheat oven to 400°F (200°C), bake covered for 40 minutes, then uncover, sprinkle Parmesan, and bake 15 more minutes.

Notes

Ensure spinach is well drained to prevent excess moisture.
