Instructions
Mix ricotta and eggs until blended, then stir in spinach, cheeses, sugar, salt, and pepper.
Stuff mixture into uncooked shells and arrange in a baking dish with sauce.
Pour remaining sauce over shells, cover, and refrigerate for 8 hours or overnight.
Preheat oven to 400°F (200°C), bake covered for 40 minutes, then uncover, sprinkle Parmesan, and bake 15 more minutes.
