  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 limes juice of 2 limes
  • fresh cilantro for garnish

Instructions 

  • Mix olive oil, garlic, cumin, paprika, oregano, salt, pepper, and lime juice to make marinade.
  • Add chicken to marinade, coat well, cover, and refrigerate for at least 1 hour.
  • Preheat oven to 425°F (220°C). Place chicken on a baking sheet, skin side up.
  • Bake for 35-40 minutes until cooked through and crispy.
  • Rest briefly, garnish with cilantro, and serve.

Notes

Marinate the chicken overnight for extra flavor.
