This comforting oven-baked chicken and rice recipe is a simple and delicious one-pan meal. The chicken thighs are seasoned to perfection and baked on top of flavorful rice, creating a complete and satisfying dish.

Ingredients

Chicken and Seasoning

  • 6 bone-in, skin-on chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Rice Mixture

  • 1 1/2 cups long-grain white rice (uncooked)
  • 2 1/2 cups chicken broth
  • 1/2 cup water
  • 3 garlic cloves minced
  • 1 medium onion, finely chopped
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon dried parsley (optional, for garnish)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix spices and rub all over chicken thighs.
  • In a baking dish, combine rice, broth, water, garlic, onion, and butter.
  • Place chicken on top of the rice, skin-side up.
  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake for 25-30 minutes, until chicken is cooked.
  • Let rest for 5 minutes, garnish, and serve.

Notes

For extra flavor, brown the chicken thighs in a skillet before baking.
