A quick and flavorful one-pot meal combining smoked sausage, pasta, and creamy tomato sauce for a satisfying dinner.

Ingredients

  • 1 tablespoon olive oil
  • 12 oz smoked sausage (sliced into 1/4-inch rounds)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz can)
  • 1/2 cup heavy cream
  • 8 oz penne pasta
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • to taste Salt and pepper
  • 1/2 cup shredded Parmesan cheese
  • Fresh parsley (chopped, for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Cook sausage until browned, then remove.
  • In the same skillet, cook onion until softened, then add garlic and cook for 1 minute.
  • Add broth, tomatoes, cream, and stir. Add pasta, spices, salt, and pepper. Bring to a boil, then simmer for 12-15 minutes.
  • Stir in sausage and Parmesan until combined. Garnish with parsley and serve.
