A quick and flavorful one-pot meal combining smoked sausage, rice, and vegetables for a satisfying dinner.

Ingredients

Main

  • 12 oz smoked sausage (kielbasa or your choice), sliced
  • 1 cup long-grain white rice
  • 1 medium onion, chopped
  • 1 cup bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • to taste Fresh parsley (optional), for garnish

Instructions 

  • Cook sliced sausage in a large pot until browned, about 5-7 minutes.
  • Add chopped onions and garlic; sauté until translucent, 3-4 minutes.
  • Stir in diced bell peppers and cook for 2-3 minutes.
  • Add rice and chicken broth; stir in Cajun seasoning.
  • Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is tender.

Notes

For extra flavor, garnish with fresh parsley before serving.
